This might sound stupid, but can you just shoot at D60 and then set a #Darktable style that does the white balance based on that? Is there a way to manually adjust the white balance of the entire collection you're editing? 😅

yes, I did this previously for a timelapse. You can edit a single image’s white balance first, then use the copy/paste history stack functionality. I think you can also use the image style function for this if you want to save the white balance settings for future use.
