Soldering to copper pipe with a soldering iron sure is hard. I had to use a kitchen torch to keep the pipe hot, otherwise the solder refused to wet it! :(
Yes! This will do a great job. Scrub the pipe briefly with steel wool and ideally put on some pre-solder flux and you'll have water-tight joints. But as you just need electrical contact, standard lead solder and flux will do fine.
